Bodean’s is a British barbecue chain that’s known for its delicious wings. Their buffalo chicken wings are some of the best in the business, and they’re made with four layers of flavour: smoked meat, dry rub, crispy skin, and delectable sauce. Now Bodeans call of their buffalo wings, “Buffalo Wings”. This doesn’t make sense to me as a buffalo wing is coated in “buffalo sauce” which comprises the four pillars of flavour – Tang, Heat, Richness and Sweet. Their hot wing is most akin to buffalo however, so we used this for the guide.

The first thing you’ll notice about Bodean’s wings is the smoke. The chicken is smoked for hours before it’s fried, which gives it a rich, smoky flavour that’s unlike anything else. The dry rub is also a key ingredient. It’s a blend of spices that perfectly complements the smoked chicken, and it adds a touch of heat and tanginess.

The crispy skin is the next layer of flavour, providing a light crunch encasing the tender, smoked meat. The delectable sauce is the final layer of flavour. It’s a non-traditional buffalo sauce that’s made with cayenne pepper, vinegar, and butter. It’s not too hot, but it has a good kick to it. They go hard on the tang here, drawing out a sharpness in each bite to cut through that dry rub.

Bodean’s serves their wings with a side of celery and blue cheese dressing. Some may argue the celery is a nice, refreshing counterbalance to the rich flavours however I don’t go for wings to pair it with salad. The blue cheese however is delightful. Light and creamy, pairing well with all wings on offer.

And if you’re a fan of traditional US-style wings, then you’ll be pleased to know that Bodean’s uses the “triple” wing, which includes the tip, flat, and drum.
